Mayo fun facts!

So I pinned this super yummy looking recipe a few months ago and made it right away. It turned out way good and I have made it for dinner several times since. Today I was going to make it for dinner and I was typing the ingredients into my recipe builder to get the nutritional info for it. I almost died...

2200 calories! for 4 servings!

Then I looked closer

1550 calories from Mayo alone. Sick!

Needless to say that wasn't going to cut it. So I decided to try to cook with greek yogurt for the first time. It cut it down to about 1200 for 4 servings. Much better!

It was really successful! Neither Dev or I could tell a difference taste wise between when I cook it with mayo or this time with greek yogurt. The only real difference was the chicken didn't get golden brown and crispy looking. I'll take it to save myself a crap ton of calories! This is what it was supposed to look like (from this link: http://www.food.com/recipe/melt-in-your-mouth-chicken-breast-37336)

And then I made cheesy zucchini rice to go with it (found here: http://bunsinmyoven.com/2012/06/28/cheesy-zucchini-rice/)

And mine turned out looking like this:

Mine was close to the picture, minus the browning of the chicken outsides. That and I should have shredded my zucchini finer. I also shredded like 4 times as much as I needed, so I probably added a lot more than needed to the rice. Either way, it turned out yummy! Devon said to add it to the list of foods to make again so there you go. If you want to do the chicken I subbed the 1 cup of mayo evenly with 1 cup of greek yogurt.

If you have picky kids (or husbands!) that don't like veggies, the rice was an awesome way to incorporate them. You couldn't even taste the zucchini and if you were to skin the zucchini first I bet you wouldn't even be able to tell it was in there :)

PS ignore how my USA p.j. pants totally clash with our casual dishes ;)

Why another blog?

I know Devon and I have a family blog (let me know if you want an invite to see it!) but I wanted to create a place to keep all my pinterest projects together. A lot of us share projects and recipes but we have been saying that no one ever knows how things work out, so I thought I would at least blog about what I've tried and how it has turned out. Plus since Devon and I are still maintaining our "getting ready for baby" diet of mostly fruits, veggies, white meat, whole grains and cut high fructose corn syrup out of our lives, I wanted to show what I've done to make popular recipes healthier. Hope you all enjoy, and if anyone else wants to blog on here too and share what they've done let me know. We then could have a group type of blog :)

PS speaking of our diet...I miss Coke still! So in celebration of that here's a picture of us before the Coca Cola World tour. We drove down to Atlanta from Charlotte to spend a few days with Devon's brother Blake, our sis-in-law Annie, and our super cute niece Ayla who are living in Birmingham for the summer. Devon's mom had flown to Alabama the previous week so they drove up to Atlanta and then Devon's mom came to spend some time with us the following week. And yes I totally cheated on my no HFCS thing to sample coke products from around the world.
