So I pinned this super yummy looking recipe a few months ago and made it right away. It turned out way good and I have made it for dinner several times since. Today I was going to make it for dinner and I was typing the ingredients into my recipe builder to get the nutritional info for it. I almost died...
2200 calories! for 4 servings!
Then I looked closer
1550 calories from Mayo alone. Sick!
Needless to say that wasn't going to cut it. So I decided to try to cook with greek yogurt for the first time. It cut it down to about 1200 for 4 servings. Much better!
It was really successful! Neither Dev or I could tell a difference taste wise between when I cook it with mayo or this time with greek yogurt. The only real difference was the chicken didn't get golden brown and crispy looking. I'll take it to save myself a crap ton of calories! And then I made cheesy zucchini rice to go with it (found here: http://bunsinmyoven.com/2012/06/28/cheesy-zucchini-rice/)
And mine turned out looking like this:
Mine was close to the picture, minus the browning of the chicken outsides. That and I should have shredded my zucchini finer. I also shredded like 4 times as much as I needed, so I probably added a lot more than needed to the rice. Either way, it turned out yummy! Devon said to add it to the list of foods to make again so there you go. If you want to do the chicken I subbed the 1 cup of mayo evenly with 1 cup of greek yogurt.
If you have picky kids (or husbands!) that don't like veggies, the rice was an awesome way to incorporate them. You couldn't even taste the zucchini and if you were to skin the zucchini first I bet you wouldn't even be able to tell it was in there :)
PS ignore how my USA p.j. pants totally clash with our casual dishes ;)
